Coconut Rice with Mango

Ingredients:

  • 2 cups of Glutinous Rice uncooked
  • 3 cups Coconut Milk
  • 3 tbsp Crushed Palm Sugar or Soft Brown Sugar
  • pinch Salt
  • 2 Mangos peeled and diced

Instructions:

  1. Mix together rice, coconut milk, sugar and salt in a saucepan.
  2. Bring mixture to a boil, reduce heat to low, cover and simmer for 20 minutes or until rice is tender and liquid is absorbed.
  3. Spoon into serving dishes and top with diced mango.
